Air Fryer Chilli Eggs
Ingredients:
102g Large Eggs (x2)
120g Mixed Grain Bread (2 x slices)
60g Avocado
20g Fresh Spinach Leaves
20ml Lemon Juice
Method:
Slice two thick pieces of mixed grain sourdough bread and set it aside.
Place the whole eggs in an air fryer and cook for ~6 minutes at 200 degrees Celsius (for a firmer centre allow to cook for a further 1-2 minutes).
Meanwhile, prepare the guacamole by combining the avocado, lemon juice, and salt/ pepper in a small bowl. Mash with a fork until well combined.
Once eggs are cooked, place the eggs in a bowl of cold water (+/- ice if desired) and allow to sit for ~2 minutes, to allow the eggs to cool.
Roll the eggs on a hard surface to crack the shell and peel off accordingly.

Start to assemble breakfast stack, laying the bread out on a plate, followed by the guacamole and spinach leaves. Slice the eggs in half, and then finally top with the cooked eggs. Finish with a sprinkle of chilli flakes (optional).
